CORNBREAD: Spinach Cornbread

Ingredients
- 1/4 cup + 2 tablespoons Butter (flavor) Olive Oil
- 1 package frozen spinach, thawed, drained
- 1 box Jiffy Cornbread mix
- 6 ounces cottage cheese
- 1/2 teaspoon salt
- 4 eggs
- 1 medium onion, chopped
Directions
- Combine all ingredients.
- Pour into into iron skillet or 2-quart pie dish.
- Bake at 350o for 45 minutes.
* To make cornbread muffins (pictured), bake 350o for 30-35 minutes (look for a light golden brown color).
