HAM: Pomegranate-Balsamic Glazed Spiral Ham

Ingredients
- 6 to 7 pound spiral sliced uncured ham
- 1 cup Pomegranate Balsamic
- 1/3 cup maple syrup
- 1/4 cup water
- 1 tablespoon dried thyme
- 1 teaspoon ground mustard
- 1/8 teaspoon ground cloves
- Himalayan salt
Directions
- Preheat oven to 3250F. Set ham on a rack in a large roasting pan and add 1/4" water in the bottom of the pan. Roast until the thickest part of the ham registers 125-1300F, about 12-14 minutes per pound.
- While the ham is in the oven, combine pomegranate balsamic, maple syrup, water, thyme, mustard, cloves, and a pinch of salt in a small saucepan. Bring to a low boil over medium heat, then reduce heat to a simmer. Keep uncovered and allow to reduce by about half or until the glaze has a thick, syrupy consistency, about 20-25 minutes, stirring frequently.
- Remove ham from the oven, and increase heat to 4250F. Drizzle the glaze on the ham using a spatula or spoon to spread Return the ham to the oven, adding more water to the bottom of the pan if necessary, and roast for another 15-30 minutes or until the glaze is thick ad sticky and the ham has reached 140-1450F. Let rest for 5 minutes before serving.
